Easy Pumpkin Purée Recipe

Easy

Prep Time

Cook Time

YIELDS

5-6 Cups

Ingredients

  • large pumpkin

Notes

  • the purée should keep in the fridge for about a week.

Tools

  • Food processor or blender
  • Pumpkin carving tools (if carving for Halloween)
  • A sharp knife
  • Oven safe bowl or tray

Instructions

If not carving for Halloween

Step 1

Preheat oven to 400°F.

Step 2

Use a sharp knife to cut your pumpkin in half from stem to bottom. Do not try to cut through the stem (it is too hard) but if you cut both sides of the stem, you can pull the pumpkin apart.

Step 3

Use your hands to scoop out pumpkin seeds and place aside (to bake or feed to chickens later), separating as much of the stringy bits as possible.

Step 4

Place pumpkin on a greased or foiled tray, skin side up. Lightly oil and season as desired.

Step 5

Bake the pumpkin until the skin is starting to separate and can be easily pierced with a knife (about 45-60 minutes).

Step 6

Remove pumpkin from oven and let cool until it is safe to handle. Use a fork or scraper to pull the insides away from the skin.

Step 7

Place cooked insides into a food processor (easiest) or blender and blend until smooth (~3-5 minutes). This may need to be done in batches.

Instructions

If carving a jack-o-lantern

Step 1

Cut a hole in the top of your pumpkin around the stem to gain access to the inside.

Step 2

Use your hands to scoop out the pumpkin seeds and set them aside, separating the stringy bits from the seeds.

Step 3

Using a scraper, remove as much of the inside of the pumpkin as possible without breaking through the outside skin (you can leave about ¼ inch).

Step 4

Place pumpkin insides on an oven safe tray or bowl and bake for 20 minutes at 400°F.

Step 5

Use tongs or a spoon to place the baked pumpkin into a food processor or blender (a food processor makes this process so much easier!) and blend until smooth (~3-5 minutes).
